Persian cuisine comprises the cooking traditions of Persian Empire. The Persian Empire refers to any of a series of imperial dynasties that were centered in Persia/Iran from the 6th century BC Achaemenid Empire era to the 20th century AD in the Qajar dynasty era.
Typical Persian dishes are combinations of rice with meat, vegetables, and nuts. Herbs are frequently used, along with fruits and vegetables such as plums, pomegranates, quince, prunes, apricots, and raisins. Characteristic Iranian flavorings such as saffron, dried lime and other sources of sour flavoring, cinnamon, turmeric, and parsley are mixed and used in various dishes.
